Why the hell is the VSS Vintorez, of all weapons, the best rifle?

The main issue I have with it is that it fires an extremely low powered round compared to other rifles. The 9x39mm is a subsonic round, meaning it doesn't break the sound barrier with it's very low velocity, meaning much lower power than other supersonic rounds. It doesn't make much sense at all. Yes, it's a larger round, but at such a low velocity (~920 FPS) it does much less damage than the other available ones.

How the hell does a well-made crowbar increase your ability to aim said rifle?

Well, according to Stalker: Shadow of Chernobyl the round can penetrate bullet proof vests. It is also the best weapon in that game aswell.

I think the main issue is that it causes way too much aggro for a silenced weapon - which is also just like Stalker.

Zombies don't have armor though, so if the round was so good at penetrating, it would actually over-penetrate the zombie causing even less damage than a different bullet.

Thats how it is in df. Real life is discarded.
